Quick Barley Soup

- 1 tablesp. olive oil shopping list
- 1/2 onion, 1/4 inch dice shopping list
- 1 medium carrot, 1/4 inch dice shopping list
- 2 stalks celery, 1/4 inch dice shopping list
- 1 garlic glove, minced shopping list
- 1 liter beef broth shopping list
- some dried mushrooms shopping list
- 1/2 cup barley, pre cooked ( Trader Joe's has a nice 10 min. barley ) shopping list
- 240 grams beef roast, cooked, 1/2 inch dice shopping list
- 1 bunch kale, prepped shopping list
- 2 teasp. herbes de provence shopping list
- Worchestershire sauce shopping list
- S+P shopping list
How to make it
- Soak mushrooms in 1/2 cup very hot water. Parboil kale for 5 min., drain, let cool a bit and squeeze dry. Chop.
- Heat olive oil in a big pot, add veggies and saute for 5 min., until softy. Add broth and bring to a boil. Stir in the barley and the mushrooms with the soaking liquid ( pour through a fine sieve ), beef, kale, herbes de provence, wouster sauce and S+P. Simmer for 10 - 15 min., until barley is tender and flavors have mingled. Adjust seasonings, let sit for 5 min. and serve.
