How to make it

  • Soak mushrooms in 1/2 cup very hot water. Parboil kale for 5 min., drain, let cool a bit and squeeze dry. Chop.
  • Heat olive oil in a big pot, add veggies and saute for 5 min., until softy. Add broth and bring to a boil. Stir in the barley and the mushrooms with the soaking liquid ( pour through a fine sieve ), beef, kale, herbes de provence, wouster sauce and S+P. Simmer for 10 - 15 min., until barley is tender and flavors have mingled. Adjust seasonings, let sit for 5 min. and serve.
