How to make it

  • Combine the egg yolks and sugar and whisk until pale ( I use an electric mixer ). Fold in the mascarpone.
  • Beat the egg whites in a clean bowl, with clean beaters until stiff. Add marsala and half of the grated chocolate. Whisk again until you have soft peaks. Gently fold into mascarpone mix.
  • Place a layer of ladyfingers in a 9*13 Pyrex dish. Pour half the coffee over, soaking them well. Spread half of the mascarpone mixture on top, repeat. Refrigerate for a least 4 hrs. Before serving, sprinkle with the remaining chocolate.

    With one exception...
    Looking ahead to 'St Paddy's Day'
    One would think a tad of 'Redbreast' with the coffee over the ladyfingers would be a nice Irish touch.
