Hummingbird Cake Recipe

Ingredients

Cake:

3 cups all-purpose flour

2 cups sugar

1 tsp. salt

1 tsp. baking soda

1 tsp. cinnamon

3 eggs, beaten

1 1/2 cups vegetable iol

1 1/2 tsp vanilla extract

1 (8-oz) can crushed pineapple, undrained

2 cups chopped pecans

2 cups chopped bananas

Cream Cheese Frosting:

1 (8oz) cream cheese, softened

1 stick margarine or butter

1 box ( 16 oz) powdered sugar

1 tsp vanilla extract

Directions

Cake:

Combine all ingredients in a large mixing bowl by hand-do not beat.

Spoon batter into 3 well greased & floured 9-inch cake pans.

Cook 350^F 25 to 30 minutes.

Cool 10 minutes before removing from pans.

Frosting:

Combine in mixer powdered sugar, cream cheese, margarine and vanilla.

Beat until light and fluffy.

Spread between layers, top and sides of cake.

I gotta say.. this looks about as good as it gets. i have never heard of hummingbird cake before tonite and i have seen two in the last 5 minutes. i'm celebrating my birthday on saturday and will make hummingbird cake for my birthday. thanks!
