Hummingbird Cake

- Cake: shopping list
- 3 cups all-purpose flour shopping list
- 2 cups sugar shopping list
- 1 tsp. salt shopping list
- 1 tsp. baking soda shopping list
- 1 tsp. cinnamon shopping list
- 3 eggs, beaten shopping list
- 1 1/2 cups vegetable iol shopping list
- 1 1/2 tsp vanilla extract shopping list
- 1 (8-oz) can crushed pineapple, undrained shopping list
- 2 cups chopped pecans shopping list
- 2 cups chopped bananas shopping list
- Cream Cheese Frosting: shopping list
- 1 (8oz) cream cheese, softened shopping list
- 1 stick margarine or butter shopping list
- 1 box ( 16 oz) powdered sugar shopping list
- 1 tsp vanilla extract shopping list
How to make it
- Cake:
- Combine all ingredients in a large mixing bowl by hand-do not beat.
- Spoon batter into 3 well greased & floured 9-inch cake pans.
- Cook 350^F 25 to 30 minutes.
- Cool 10 minutes before removing from pans.
- Frosting:
- Combine in mixer powdered sugar, cream cheese, margarine and vanilla.
- Beat until light and fluffy.
- Spread between layers, top and sides of cake.

I gotta say.. this looks about as good as it gets. i have never heard of hummingbird cake before tonite and i have seen two in the last 5 minutes. i'm celebrating my birthday on saturday and will make hummingbird cake for my birthday. thanks!
