Cashew, Shrimp & Pea Salad

- dill DRESSING shopping list
- 1/4 cup Best Foods mayonnaise shopping list
- 1/4 cup organic sour cream shopping list
- 1 tablespoon lemon juice shopping list
- 1 tablespoon fresh dill, minced shopping list

- SALAD shopping list
- 1 1/2 cups roasted unsalted cashews shopping list
- 4 cups frozen petite peas, thawed and drained shopping list
- 1 cup green onion, thinly sliced, including tops shopping list
- 2 large stalk celery, finely chopped shopping list
- 1 lb small cooked shrimp shopping list
- sea salt & fresh ground pepper, to taste shopping list
- 8 large butter lettuce leaves, washed and crisped shopping list
- dill sprigs (optional for garnish) shopping list
How to make it
- Combine the dressing ingredients and mix well.
- Set aside 2 tablespoons of the cashews. Combine remaining nuts, peas, onions, celery, and shrimp.
- Gently mix in dressing. Season with salt and pepper to taste.
- Line a serving platter or bowl with lettuce.
- Spoon salad into center; garnish with reserved cashews and, if desired, dill.
