How to make it

  • Fry onions, carrots and celery in olive oil until golden
  • Add 1/2 the water
  • Add blended tomatoes
  • Add all the herbs and spices
  • Add potato and sweet potato
  • Simmer for 15 minutes
  • Add remaining water
  • Add broccoli, green beans, 4 bean mix and lentils
  • Simmer for 15 minutes
  • Add zucchini
  • Adjust the amount of liquid to taste as required
  • Season with salt and pepper to taste
  • Simmer for 15 minutes
  • Serve with toast or crusty bread
