Rich Vegetable Stew

- olive oil shopping list
- 2 onions, diced shopping list
- 2 carrots, diced shopping list
- 3 sticks of celery, diced shopping list
- 2 cups of potato, chopped into big bite pieces shopping list
- 2 cups of sweet potato, chopped into big bite sized pieces shopping list
- 2 cups of broccoli flowerets shopping list
- 2 cups zucchini, thickly sliced shopping list
- 1 cup of green beans chopped shopping list
- 1 cup or tin of cooked lentils shopping list
- 1 cup or tin of 4 bean mix shopping list
- 1 - 2 large tins of tomatoes, blended shopping list
- 6-8 cups of water or vegetable stock shopping list
- 2 tbsp sweet paprika shopping list
- 2-3 bayleaves shopping list
- 1 tsp mild curry powder shopping list
- 1 tsp tarragon shopping list
- 1 tsp oregano or marjoram shopping list
- 1/2 tsp garam masala shopping list
- 1/2 tsp mixed herbs shopping list
- 1/2 tsp cinnamon shopping list
- salt and pepper shopping list
How to make it
- Fry onions, carrots and celery in olive oil until golden
- Add 1/2 the water
- Add blended tomatoes
- Add all the herbs and spices
- Add potato and sweet potato
- Simmer for 15 minutes
- Add remaining water
- Add broccoli, green beans, 4 bean mix and lentils
- Simmer for 15 minutes
- Add zucchini
- Adjust the amount of liquid to taste as required
- Season with salt and pepper to taste
- Simmer for 15 minutes
- Serve with toast or crusty bread
