Tangy Stick Blender Mayo

- 2 large egg yolks shopping list
- 1 1/2 cup canola, or veggie oil shopping list
- 1 T fresh squeezed lemon juice shopping list
- 3/4 T white wine vinegar, or rice vinegar shopping list
- 3/4 tsp salt shopping list
- 1/8 tsp sugar shopping list
- 3/4 tsp yellow mustard shopping list
- 1/2 tsp prepared horseradish shopping list
How to make it
- Separate two egg yolks, discarding the whites and place them in a large cup or a small bowl
- Add all the ingredients and wait a moment for the egg yolks to settle back down to the bottom
- Place the stick blender (emersion blender) on the bottom of the cup/bowl
- Pulse the blender...one quick pulse at a time at first, to create an emulsion
- Continue to pulse, and you'll see the oil beginning to emulsify
- Don't blend at full speed until all of the oil is mixed
- That's it! It's that simple. Add adobo sauce for a spicy, smokey chipotle mayo
- You can also substitute olive oil instead of canola for a delicious aioli
- Half canola, half olive oil works, too.
