Rick's Spicy Orange Sherry Sauce

- 1-2 tbsp extra virgin olive oil shopping list
- 1/3 cup butter shopping list
- 1 garlic clove minced shopping list
- 5-6 cherry tomatoes, diced shopping list
- 2 green onions, sliced shopping list
- 1/3 jalapeno, seeded, diced (use more or less, it's what we had in the fridge!) shopping list
- 1 pinch cayenne shopping list
- 1 pinch red pepper flakes shopping list
- 1 tsp smoked paprika shopping list
- 3/4 cup dry sherry shopping list
- 1/2 lemon, juiced shopping list
- 1 1/2 cups fresh squeezed orange juice shopping list
- 2 tbsp honey shopping list
- salt & freshly ground pepper to taste shopping list
How to make it
- Add butter & evoo to a saute pan on low-med heat, add garlic..saute for 1 minute, add the tomatoes, green onion, jalapeno, cayenne, red pepper flakes & paprika, and continue cooking for a minute or so. Add the sherry, bring to a boil, cook for a few minutes, add lemon juice, orange juice & honey, mix well. Add a little salt & pepper to taste. Simmer on low until sauce has reduced and thickened. Serve over grilled chicken, pork chops etc.
