Grilled Halibut & Fresh Mango Salsa Salad

- 4 (6 oz) pieces fresh, wild halibut filet shopping list
- olive oil, for brushing shopping list
- pink himalayan salt and fresh ground black pepper shopping list

- For fresh mango salsa: shopping list
- 1 cup finely chopped fresh heirloom tomato shopping list
- 1 cup finely chopped fresh red bell pepper shopping list
- 1 cup finely chopped fresh mango shopping list
- 1/2 cup finely chopped red onion, rinsed shopping list
- 1/4 cup finely chopped fresh cilantro shopping list
- 1/4 cup fresh lime juice shopping list
- splash of rice wine vinegar shopping list
- sea salt and fine sugar, to taste shopping list
- 1 fresh avocado, roughly chopped shopping list
- ~ shopping list
- organic baby spinach shopping list
How to make it
- Prepare grill.
- Combine all the salsa ingredients in a bowl, adding avocado last so it doesn't get all squished up.
- Brush halibut with oil; sprinkle with salt and pepper. Place fish on grill rack; grill 3 minutes on each side or until fish flakes easily when tested with a fork. Serve over baby spinach and top with mango salsa, drizzling any juices from the salsa around the plate.
