How to make it

  • In a bowl, cream together suar, shortening and eggs.
  • Stir in coffee.
  • Sift together flour, baking soda, salt, cinnamon, nutmeg and cloves.
  • Slowly beat dry mixture into wet mixture.
  • Strain applesauce in a cheesecloth or fine sieve.
  • Stir into batter.
  • Stir in raisins and/or dates and the nuts.
  • Refrigerate batter for 1 hour or overnight.
  • Drop batter in 1 heaping tablespoon at a time, onto a lightly greased cookie sheet. Keep cookies about 2 inches apart.
  • Bake at 375 degrees for 9-12 minutes, until your finger doesn't leave an impression in the center when you press on it.
  • Keep your eye on these as they can overcook quickly if you leave them unattended.

    Sounds delicious. Think this would be great with coffee? It would be better if someone knew how to make coffee!
