Applesauce Cookies

- 2 cups packed brown sugar shopping list
- 1 cup shortening shopping list
- 2 eggs shopping list
- 1/2 cup cold coffee shopping list
- 3 1/2 cups sifted all-purpose flour shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon ground cinnamon shopping list
- 1 teaspoon nutmeg shopping list
- 1 teaspoon ground cloves shopping list
- 2 cups chunky applesauce shopping list
- 1 cup chopped raisins and/or dates shopping list
- 1/2 cup chopped nuts shopping list
How to make it
- In a bowl, cream together suar, shortening and eggs.
- Stir in coffee.
- Sift together flour, baking soda, salt, cinnamon, nutmeg and cloves.
- Slowly beat dry mixture into wet mixture.
- Strain applesauce in a cheesecloth or fine sieve.
- Stir into batter.
- Stir in raisins and/or dates and the nuts.
- Refrigerate batter for 1 hour or overnight.
- Drop batter in 1 heaping tablespoon at a time, onto a lightly greased cookie sheet. Keep cookies about 2 inches apart.
- Bake at 375 degrees for 9-12 minutes, until your finger doesn't leave an impression in the center when you press on it.
- Keep your eye on these as they can overcook quickly if you leave them unattended.
