Ingredients
  • 1.5 cups sugar
  • 1.5 cups all purpose flour
  • 1.5 cups whole wheat flour
  • 1 tsp baking soda
  • 0.25 tsp baking powder
  • 0.25 tsp salt
  • 1 tbsp cinnamon
  • 1 tbsp vanilla
  • 0.25 tsp nutmeg
  • 0.25 c chopped walnuts
  • 3 eggs
  • 3 cups zucchini, grated or finely diced
  • 0.25 c canola oil
  • 0.5 c pureed apple
  • 0.25 c pureed banana

Directions
  1. Preheat oven to 350 F
  2. Mix all the dry ingredients together in a large bowl
  3. Mix all the wet ingredients in a seperate bowl
  4. Add the wet ingredients to the dry ingredients and stir, but we careful not to over mix.
  5. Pour into mini loaf pans (around 5 mini loaves)
  6. Bake for 40-45 minutes.
  7. Insert a bamboo skewer to test if they are done.
  8. The skewer should be 95% dry, but will not be completely clean. That is okay, you want the bread slightly moist!
  9. Slice the loaves into 6 slices each (more or less, up to you)
