Low Fat Zucchini Mini Loaves

- 1.5 cups sugar shopping list
- 1.5 cups all purpose flour shopping list
- 1.5 cups whole wheat flour shopping list
- 1 tsp baking soda shopping list
- 0.25 tsp baking powder shopping list
- 0.25 tsp salt shopping list
- 1 tbsp cinnamon shopping list
- 1 tbsp vanilla shopping list
- 0.25 tsp nutmeg shopping list
- 0.25 c chopped walnuts shopping list
- 3 eggs shopping list
- 3 cups zucchini, grated or finely diced shopping list
- 0.25 c canola oil shopping list
- 0.5 c pureed apple shopping list
- 0.25 c pureed banana shopping list
How to make it
- Preheat oven to 350 F
- Mix all the dry ingredients together in a large bowl
- Mix all the wet ingredients in a seperate bowl
- Add the wet ingredients to the dry ingredients and stir, but we careful not to over mix.
- Pour into mini loaf pans (around 5 mini loaves)
- Bake for 40-45 minutes.
- Insert a bamboo skewer to test if they are done.
- The skewer should be 95% dry, but will not be completely clean. That is okay, you want the bread slightly moist!
- Slice the loaves into 6 slices each (more or less, up to you)
