Peanut Butter And Jam Bars Recipe
Yummy, yummy to my tummy!!! Serve these up with some milk. Kid and Adult friendly. They won't last long!!!

Ingredients
  • 1 cup, 2 sticks, butter, softened (no substitutes)
  • 1 cup sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 3 cups all-purpose flour
  • 1 cup salted dry-roasted peanuts, coarsely chopped
  • 1 cup strawberry jam, or your personal favorite

Directions
  1. Preheat oven to 350 degrees.
  2. Grease a 13x9 inch baking pan. (I use a metal baking pan)
  3. Line pan with foil and grease the foil.
  4. In a large bowl, with a mixer at low speed, beat butter and sugar until mixed well. Scrape occasionally with a spatula.
  5. Increase speed to high, beat until light and fluffy.
  6. Reduce speed to low.
  7. Beat in peanut butter, then egg until well combined. Again, scrape the bowl occasionally.
  8. Beat in flour just until evenly moistened. The dough should be crumbly.
  9. Beat in peanuts.
  10. Reserve 2 cups of dough.
  11. Press remaining dough evenly onto bottom of the pan.
  12. Spread jam over the dough in the pan.
  13. With your hand, press the reserved dough into large chunks, about 3/4 inch, and sprinkle over jam, leaving spaces between chunks.
  14. DO NOT pat down.
  15. Bake at 350 degrees for 45-50 minutes, until golden.
  16. Cool completely in the pan on a wire rack.
  17. When cool,transfer with foil to a cutting board.
  18. Cut lengthwise into 3 strips, then cut each strip crosswise into 8 bars.
  19. You should get 24 bars.
