Pale Peach Perfection Salad

Ingredients
- 1 bag of pre-washed baby spinach leaves shopping list
- 1 large white flesh peach shopping list
- 1/3 cup of crumbled fresh feta cheese shopping list
- 1/4 cup of slivered almonds, toasted shopping list
- 1/2 teaspoon of cajun seasoning blend shopping list
- 1 1/2 tbsp white balsamic vinegar shopping list
- 1 tbsp Dijon mustard shopping list
- 1 tbsp honey shopping list
- 1/3 to 1/2 cup of extra virgin olive oil shopping list
How to make it
- Whisk vinegar, mustard and honey together.
- Add cajun seasoning.
- Whisk in olive oil until dressing emulsifies.
- Slice peach into thin slivers.
- Top baby spinach with peach, feta and almonds.
- Toss and EAT!
