Green Chili Enchiladas

- 8 tortillas shopping list
- 2 cups cooked, shredded chicken shopping list
- 2 cups shredded cheese (cheddar or a Mexican blend) shopping list
- 1/2 cup green salsa verde shopping list
- 3 T. butter shopping list
- 3 T. flour shopping list
- 2 cups chicken broth shopping list
- 1 cup plain yogurt shopping list
- 1 (4 oz.) can green chilis shopping list
- monterey jack cheese shopping list
How to make it
- Preheat oven to 350°. Grease a 9x13 pan.
- Mix the cooked chicken with shredded cheese and salsa verde. Roll up in tortillas and place in pan.
- Melt butter in a saucepan. Mix in flour, then chicken broth. Whisk until smooth. Simmer on low until thick and bubbly. Remove from heat. Mix in yogurt (or sour cream) and chilis.
- Pour sauce over tortillas. Top with Monterey Jack cheese to taste.
- Bake until browned and bubbly on top, about 25 minutes.
