How to make it

  • Trim tops and peel stems from the artichokes.
  • Put in pressure cooker.
  • Sprinkle onion, olive oil, garlic, savory, salt and white wine over artichokes.
  • Cook in pressure cooker for 10 minutes.
  • Drizzle juices over the artichokes and serve.
  • Mix sauce ingredients and serve on the side for dipping if desired.

  • Alternative dipping sauces:
  • Hot butter with a squeeze of anchovy paste and lemon juice!
  • Hot hollandaise sauce
  • Creamy horseradish sauce
  • Sherry vinaigrette with crumbled egg yolks over top.

    I am with your daughter on this one! This recipe sounds terrific. I even inheirited my grammy's pressure cooker. This will be my first use with it!!!
