a sicilian traditional riceball made in reggio calabria that i have added a fresh twist to.

Ingredients
  • 2 cups basmati rice
  • 2 lbs of mixed ground pork, beef and veal
  • 8 oz of tomatoe sauce
  • 12 oz of fresh mozzerella shredded
  • 6 oz of loccatelli cheese
  • 1 small onion diced
  • 3 cloves of garlic chopped
  • 4 cups of plain homemade bread crumbs
  • 32 0z of chef blend olive oil
  • 5 egg yolks
  • 1 whole egg

Directions
  1. saute meat until brown and drain the fat remove from pan
  2. saute onions and garlic until tranparent
  3. add meat and sauce cook for 5 to 7 minutes
  4. remove from pan and refrigerate for 10 minutes
  5. remove from fridge add cheeses and eggs
  6. heat oil to 400 degrees
  7. keeping your hand slightly wet roll the rice mixture into balls the size of golf balls
  8. bread and fry until golden brown
  9. useing a spider spoon remove fromm oil and put on colling rack
  10. ENJOY!

I'm assuming that Chef Blend olive oil is a vegetable oil-olive oil blend? A friendly hint: this site has "friends" from around the world and specific brands aren't always available. And Locatelli is a brand (one of the best) of Pecorino Romano cheese. It's not available everywhere, including where I live.


That sounds delicious - when I find all these ingredients (and the heat finally subsides!) I will have to try these...yum!


This is probably a dumb question, but can you buy the ground meats already mixed? Or do you mix them yourself? I know next to nothing about Italian cooking.
