Curried Turkey Salad

- For the Dressing, Whisk: shopping list
- 1 c. Greek-style yogurt shopping list
- 1/4 c. dry white wine shopping list
- 1 T. curry powder shopping list
- 1 T. minced garlic shopping list
- 1 T. minced fresh ginger shopping list
- 1 T. fresh lime juice shopping list
- 1 t. kosher salt shopping list
- 1/4 t. black pepper shopping list
- For the salad, plump: shopping list
- 1/2 c. dried cranberries shopping list
- 1/2 c. warm water shopping list
- Combine: shopping list
- 2 1/2 c. cooked, diced turkey shopping list
- 3/4 c. Red Delicious or fuji apple shopping list
- 1/2 c. diced onion (I use sweet onions) shopping list
- 1 T. chopped fresh cilantro shopping list
- 3/4 c. chopped, roasted and salted cashews shopping list
- 6 croissants, halved shopping list
- green leaf lettuce shopping list
How to make it
- For the dressing, whisk together yogurt, wine curry powder, garlic, ginger, lime juice, salt, and pepper; set aside.
- For the salad, plump cranberries in water in a small bowl; set aside.
- Combine turkey, apple, onion, and cilantro in a bowl. Drain the cranberries, add to salad, and discard the water.
- Toss salad with dressing to coat. Stir in cashews just before serving. Serve salad on croissants with lettuce, if desired.
