Ingredients

How to make it

  • Place eggplant in a colander and sprinkle with salt.
  • Set aside for 30 minutes.
  • Rinse and pat dry.
  • Place eggplant in a baking dish and toss with1 tbs. oil.
  • Cover and microwave 8 minutes,or bake at 450* for 30 to 35 minutes.
  • In a large pot,heat 1 tbs. oil and saute garlic and onion over low heat until onion begins to brown, about 10 minutes.
  • Add tomatoes and tomato paste.
  • Simmer, uncovered, over medium heat for 40 to 45 minutes, or until thickened.
  • Stir in eggplant and basil.
  • Season with salt and pepper.
  • Keep warm.
  • Cook pasta (I like to use the whole wheat pasta)according to package directions.
  • Drain and toss with sauce.
  • Top with parmesan cheese
