How to make it

  • Easy preparation:
  • mash bananas with a fork, stir in the eggs
  • In a large bowl, add the flour, sugar, salt and baking powder
  • Whisk all well
  • Pour in the melted butter, skim milk and egg/banana mash and vanilla
  • Beat with electric mixture first on low to combine then on medium speed to blend all well for a minute or two
  • Fold berries into batter
  • Pour batter into a greased and floured large 9 x5 loaf pan half full
  • Place remainder of batter in mini pans
  • Bake 350F 60+ minutes for large loaf until wooden toothpick comes out clean in center.
  • Mini loaf bakes in less than half that time
  • Cool on rack 5 minutes before carefully removing form pan
  • Note: I use Bakers spray to coat my loaf pan

  • Best if allowed to mellow overnight by wrapping in foil.
  • But also tastes great when cooled to room temperature

    Sounds very good. I see you forgot to put in the recipe instructions when to add the blueberries & strawberries. I'm guessing you fold them in after the mixture has been beaten in the electric mixer. Certainly will be trying it out soon.
