Patti's Favorite Rhubarb Bars

- Ingredients for crust shopping list
- 1 ½ cups all-purpose flour shopping list
- ½ cup powdered sugar shopping list
- 1 stick of butter (cut up in chunks) shopping list
- Ingredients for filling shopping list
- 1 ½ cups sugar shopping list
- ½ cup all-purpose flour shopping list
- 3 slightly beaten eggs shopping list
- 1 ½ teaspoons vanilla shopping list
- 6 cups chopped rhubarb shopping list
How to make it
- In a food processor combine the flour, the powdered sugar and the butter. Pulse until the mixture resembles coarse crumbs.
- Pat the crumb mixture into the bottom of a 9x13” baking pan. Bake in a 350 degree oven for 15 minutes.
- In a bowl mix together the eggs, sugar, vanilla and flour. Stir in the rhubarb. Pour over the warm crust in the baking pan.
- Return to the oven to bake for 45 minutes. Let cool in the pan. Store in the refrigerator.
