How to make it

  • In a food processor combine the flour, the powdered sugar and the butter. Pulse until the mixture resembles coarse crumbs.
  • Pat the crumb mixture into the bottom of a 9x13” baking pan. Bake in a 350 degree oven for 15 minutes.
  • In a bowl mix together the eggs, sugar, vanilla and flour. Stir in the rhubarb. Pour over the warm crust in the baking pan.
  • Return to the oven to bake for 45 minutes. Let cool in the pan. Store in the refrigerator.
