How to make it

  • One may brown the scallops if desired by sauteing in some oil/butter if desired , this step is optional
  • In a heavy duty sauce pan melt 2 Tbs butter and 1 Tbs olive oil over med-high heat
  • Saute the sliced mushrooms and onions till softened and slightly browned
  • Add some good splashes of white wine and cook over high heat to reduce the wine a bit
  • Add the scallops and lemon juice and cook and stir constantly over high heat for several minutes until scallops are cooked
  • Serve at once
  • Optional: add some heavy cream to pan juices to make a cream based sauce if desired.
  • Serve this if desired over pasta, quinoa, barley or risotto
