Scallops With Mushrooms, Wine And Lemon

- 1 lb fresh scallops shopping list
- 1 small box white mushrooms shopping list
- 1 medium red onion sliced shopping list
- juice from one lemon shopping list
- splashes of white wine shopping list
- olive oil and butter shopping list
How to make it
- One may brown the scallops if desired by sauteing in some oil/butter if desired , this step is optional
- In a heavy duty sauce pan melt 2 Tbs butter and 1 Tbs olive oil over med-high heat
- Saute the sliced mushrooms and onions till softened and slightly browned
- Add some good splashes of white wine and cook over high heat to reduce the wine a bit
- Add the scallops and lemon juice and cook and stir constantly over high heat for several minutes until scallops are cooked
- Serve at once
- Optional: add some heavy cream to pan juices to make a cream based sauce if desired.
- Serve this if desired over pasta, quinoa, barley or risotto
