How to make it

  • Preheat oven to 350
  • Gather 3 mixing bowls
  • In the 1st bowl measure ALL dry ingredients (including spices and sugar) and mix with a whisk to incorporate well.
  • In the 2nd bowl mix together eggs, milk, lemon zest, vanilla extract, and applesauce.
  • In the 3rd bowl mash bananas with a handheld potato masher.
  • Add the mashed bananas to the egg mixture and whisk to incorporate.
  • Add dry ingredients to wet ingredients in 3 batches and whisk to incorporate.
  • Add melted butter and whisk to incorporate.
  • Add half of the blueberries and fold in with a rubber/silicon spatula.
  • your muffin tin well (I used butter) and dust lightly with flour.
  • Add muffin batter to muffin pan and fill approximately 3/4 full (about 3oz of batter per muffin)
  • Top muffins with remaining blueberries, about 3-4 on each should do.
  • Bake muffins in preheated oven for 12-15 minutes, or until a toothpick comes out clean.
  • Allow muffins to cool in pan, and enjoy!
