Blueberry Banana Muffins

- 1/2 tsp lemon zest, approximately the zest of 1/2 of a small lemon shopping list
- 2 over riped bananas shopping list
- 6oz riped blueberries shopping list
- 1 cup flour shopping list
- 1 cup almond meal shopping list
- 3/4 cup of sugar shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 1 tsp salt shopping list
- 1/4 tsp ground nutmeg shopping list
- 2 eggs shopping list
- 2/3 cup cinnamon apple sauce (if you only have plain applesauce, add 1 tsp ground cinnamon ) shopping list
- 3 tbls milk shopping list
- 1 tsp vanilla extract shopping list
- 2 tbls melted butter shopping list
How to make it
- Preheat oven to 350
- Gather 3 mixing bowls
- In the 1st bowl measure ALL dry ingredients (including spices and sugar) and mix with a whisk to incorporate well.
- In the 2nd bowl mix together eggs, milk, lemon zest, vanilla extract, and applesauce.
- In the 3rd bowl mash bananas with a handheld potato masher.
- Add the mashed bananas to the egg mixture and whisk to incorporate.
- Add dry ingredients to wet ingredients in 3 batches and whisk to incorporate.
- Add melted butter and whisk to incorporate.
- Add half of the blueberries and fold in with a rubber/silicon spatula.
- your muffin tin well (I used butter) and dust lightly with flour.
- Add muffin batter to muffin pan and fill approximately 3/4 full (about 3oz of batter per muffin)
- Top muffins with remaining blueberries, about 3-4 on each should do.
- Bake muffins in preheated oven for 12-15 minutes, or until a toothpick comes out clean.
- Allow muffins to cool in pan, and enjoy!
