Lentil Soup with Barley

- 1 tbsp vegetable oil shopping list
- 2 cloves garlic, minced shopping list
- 1 onion, chopped shopping list
- 1 celery stalk, chopped shopping list
- 1 carrot, chopped shopping list
- 1 tsp dried marjoram shopping list
- 1tsp dried thyme shopping list
- 1/4 tsp pepper shopping list
- salt shopping list
- 2 c vegetable stock shopping list
- 2 c water shopping list
- 1/4 c barley shopping list
- 1/4 c fresh parsley, chopped shopping list
- 1 c brown or green lentils shopping list
- 1 c plain nonfat yogurt shopping list
- 1/4 c plain low-fat yogurt (optional) shopping list
- 1 tbsp fresh parsley, minced (optional) shopping list
How to make it
- Heat oil over medium heat in large saucepan.
- Saute together onion, celery, carrot, marjoram, thyme, pepper and salt until onions are soft.
- This will take about 5 minutes.
- Then add water, stock, barley and lentils and bring to boil.
- Reduce heat and simmer, covered, until lentils and barley are tender.
- This will take about 40 minutes.
- Stir in parsley prior to serving.
- Top each serving of soup with a spoonful of yogurt.
- Finally, sprinkle a dash of chopped parsley and ENJOY!!
