How to make it

  • Put spinach in a large covered microwave bowl and microwave on high for 3 minutes.
  • Drain and squeeze dry.
  • Chop more if necessary.
  • Mix the spinach with rest of the ingredients and spread in the pie plate.
  • Cover with the top crust and bake at 375° for 40 to 45 minutes
  • ~ ~ ~ ~
  • Easy to make, and it freezes beautifully – cooked or uncooked.
  • Just pull it out of the freezer and rebake in the toaster oven – the same old 425° for 40-45 minutes.
  • Of course, give it a little longer if it wasn’t baked previous to freezing.
