Spinach Cheese Pie

- 1 large bunch spinach – thoroughly rinsed and roughly chopped shopping list
- 1 cup ricotta cheese shopping list
- 2 cups Monterey Jack cheese – cut into small dice shopping list
- 1 egg – beaten with a fork shopping list
- 1/3 cup Parmesan cheese – grated shopping list
- salt & pepper to taste shopping list
- ¼ tsp nutmeg – ground (I must confess – I use a little more than this) shopping list
- 1 tsp oregano – dried shopping list
- 1 double 9” pie crust shopping list
How to make it
- Put spinach in a large covered microwave bowl and microwave on high for 3 minutes.
- Drain and squeeze dry.
- Chop more if necessary.
- Mix the spinach with rest of the ingredients and spread in the pie plate.
- Cover with the top crust and bake at 375° for 40 to 45 minutes
- ~ ~ ~ ~
- Easy to make, and it freezes beautifully – cooked or uncooked.
- Just pull it out of the freezer and rebake in the toaster oven – the same old 425° for 40-45 minutes.
- Of course, give it a little longer if it wasn’t baked previous to freezing.
