Spaghetti With Shrimp And Bacon

- coarse salt and ground pepper shopping list
- 12 oz. spaghetti shopping list
- 2 strips bacon, chopped shopping list
- 8 oz. large peeled and deveined shrimp, halved horizontally shopping list
- 6 scallions, chopped shopping list
- 2 garlic cloves, minced shopping list
- 1 Tbs. fresh lemon juice shopping list
How to make it
- In a large pot of boiling salted water, cook pasta until al dente. Reserve 1/2 cup pasta water. Drain.
- While pasta is cooking, fry bacon in a large skillet over medium heat until browned, 6 to 8 minutes. Using a slotted spoon, transfer to a paper towel lined plate.
- Add shrimp, scallions and garlic to skillet. Cook, stirring frequently until shrimp are almost opaque, 1 to 2 minutes. Add 1/4 cup pasta water and bring to a boil.
- Add lemon juice to sauce, stir and add pasta. Season with salt and pepper and toss to combine. Add more pasta water as needed. I used all but about 1 tablespoon. Serve sprinkled with bacon.
- ~~ I'm thinking 1/2 a tsp or so of Old Bay Seasoning would be nice in that sauce.
