How to make it

  • In a large pot of boiling salted water, cook pasta until al dente. Reserve 1/2 cup pasta water. Drain.
  • While pasta is cooking, fry bacon in a large skillet over medium heat until browned, 6 to 8 minutes. Using a slotted spoon, transfer to a paper towel lined plate.
  • Add shrimp, scallions and garlic to skillet. Cook, stirring frequently until shrimp are almost opaque, 1 to 2 minutes. Add 1/4 cup pasta water and bring to a boil.
  • Add lemon juice to sauce, stir and add pasta. Season with salt and pepper and toss to combine. Add more pasta water as needed. I used all but about 1 tablespoon. Serve sprinkled with bacon.
  • ~~ I'm thinking 1/2 a tsp or so of Old Bay Seasoning would be nice in that sauce.

    Everything is better with bacon. I love this. I'm thinking I can swing this into our menu this week. Side of fresh spinach, yep, that's the ticket.
