How to make it

  • Preheat oven to 350.
  • Place roast in a turreen. Sprinkle spices over the roast.
  • Mix honey and water, pour over roast.
  • Bake 1 1/2 to 2 hours or until done. Remove from turreen and place on warming plate.
  • When pork is almost done, pour melted butter into a 10 inch skillet and cook potatoes for about 10 minutes over medium heat. Pour juices from pork roast over potatoes, adding more honey if desired. Scrape bottom of the baking dish and add, also. Continue cooking about 10 to 15 minutes, or until potatoes are cooked through.
  • This is delicious with a mixed green salad or sliced raw apples.

    I missed this when you posted it! I love the sound of this. Can I please substitute the white potatoes for sweet potatoes? :)
