Easy Cioppino

- 2 tablespoons olive oil shopping list
- 1 small sweet yellow onion, finely chopped shopping list
- 2-3 cloves fresh garlic, minced shopping list
- healthy squirt of double concentrated tomato paste shopping list
- 2 cups fresh or canned organic tomatoes, chopped shopping list
- generous splash of dry white wine shopping list
- bay leaf, dried oregano shopping list
- 2 cups roasted chicken stock (homemade preferably) shopping list

- 1 bag wild argentinian red shrimp (uncooked) shopping list
- 1 pkg. wild alaskan cod fillets shopping list
- 1 box steamer clams in garlic butter sauce shopping list

- fresh parsley & lemon shopping list
- sea salt and black pepper, to taste shopping list
How to make it
- saute onions and garlic in olive oil until soft, Add tomato paste, tomatoes and herbs, saute a few minutes more. Add wine, stock and bring to a boil. Add your cod filets first, simmer gently until defrosted. Add shrimp and clams, bring up heat until shrimp are done and clams have popped open. Season to taste and finish with fresh parsley and fresh lemon slices...
