Moroccan Turkey Stew

- 1 tbsp olive oil shopping list
- 1 small onion, halved and sliced thinly shopping list
- 6 cloves garlic, minced shopping list
- 1 Hungarian wax pepper, halved, seeded and diced shopping list
- 1 ½ cups shredded carrots shopping list
- ½ medium zucchini, shredded or diced shopping list
- 10 oz cooked, chopped turkey (or chicken) meat shopping list
- ½ tbsp ground cinnamon shopping list
- ¼ tsp ground allspice shopping list
- 1 tsp ground cumin shopping list
- 1 tsp paprika shopping list
- 1 tsp dried thyme shopping list
- 1 (29 oz) can diced tomatoes shopping list
- ½ cup turkey or chicken stock shopping list
- 1 tbsp honey shopping list
- 7 oz chopped green beans shopping list
How to make it
- Heat oil in a deep pot over medium heat.
- Add onion and cook until golden, about 8-10 minutes.
- Stir in garlic, peppers, carrots and zucchini. Cook 5 minutes, until softened.
- Stir in chicken, spices, tomatoes, stock and honey. Cover and simmer 30 minutes.
- Add beans, re-cover and cook 5 minutes.
