Beef and Wine Stew

- 700gr/ 1 pound and a half stewing beef, cubed shopping list
- Olive oil, 2 or 3 tbsp shopping list
- 1 onion, chopped shopping list
- 3 cloves of garlic, chopped shopping list
- 2 tbsp tomato paste shopping list
- 2 tsp smoked paprika shopping list
- 1 cup good red wine shopping list
- 1 – 2 cups of beef stock shopping list
- 3 carrots, cut into thick dices shopping list
- 2 bay leaves shopping list
- Salt and pepper to taste shopping list
How to make it
- I start off this stew by searing the beef in a few glugs of olive oil. I do it in the pressure cooker, lid off. After the beef is coated, add the onion and garlic. Stir for 2 or 3 mins.
- Add tomato paste and paprika. Stir to combine.
- Add the wine and one cup of stock, the bay leaves, carrots and season to taste with salt and pepper. I eye ball the addition of more beef stock, it depends on how much sauce you want!
- Put the pressure cook lid on and cook away in medium heat for 20 to 30 mins. Check the tenderness of your beef (it won’t probably need more time, but you never know…)
- With the lid off, sprinkle 1 tbsp of flour on the stew and stir. Let the flour cook away for 5 min.
- It is ready to serve over creamy mash!
