Zucchini Relish

- 12 cups of scrubbed chopped zucchini shopping list
- 4 cups of chopped green onion, whites and tops shopping list
- 2 large bell peppers, one yellow, one red shopping list
- 6 tablespoons of kosher salt shopping list
- 5 cups of white sugar shopping list
- 2 1/2 cups of white vinegar shopping list
- 1 tsp of tumeric shopping list
- 2 tsp of pickling spice and 1 tsp of celery seed in tea strainer or tied in a cheesecloth bag shopping list
How to make it
- In a big colander mix zucchini, green onion, bell peppers and salt.
- Let stand overnight to drain.
- Next morning, sterilize your pint jars.
- In a sauce pan, drop in the tea ball, add sugar, vinegar and turmeric.
- Bring to a boil and boil for five minutes.
- Stand back, the vinegar will get you.
- Remove the tea strainer or spice bag.
- In a large stock pot, add veggies and pour hot vinegar mix over the top and boil for five minutes more, stir occasionally.
- Put in sterilized jars, seal.
- Keep in the refrigerator.
