Zucchini Relish Recipe
Something different to do with a bunch of zucchini. We like this relish added to potato salad, on top of burgers, topping a grilled hotdog, mixed in mayonnaise for fish.

Ingredients
  • 12 cups of scrubbed chopped zucchini
  • 4 cups of chopped green onion, whites and tops
  • 2 large bell peppers, one yellow, one red
  • 6 tablespoons of kosher salt
  • 5 cups of white sugar
  • 2 1/2 cups of white vinegar
  • 1 tsp of tumeric
  • 2 tsp of pickling spice and 1 tsp of celery seed in tea strainer or tied in a cheesecloth bag

Directions
  1. In a big colander mix zucchini, green onion, bell peppers and salt.
  2. Let stand overnight to drain.
  3. Next morning, sterilize your pint jars.
  4. In a sauce pan, drop in the tea ball, add sugar, vinegar and turmeric.
  5. Bring to a boil and boil for five minutes.
  6. Stand back, the vinegar will get you.
  7. Remove the tea strainer or spice bag.
  8. In a large stock pot, add veggies and pour hot vinegar mix over the top and boil for five minutes more, stir occasionally.
  9. Put in sterilized jars, seal.
  10. Keep in the refrigerator.

Oh yummmmmmmm sounds delic!


This sounds similar to my Nannas relish...she passed away alomst 10 yrs ago and I've been looking for a zucchini relish recipe using chopped zucchini, not shredded or grated. I'm going to try this! Thanks!
