How to make it

  • In a big colander mix zucchini, green onion, bell peppers and salt.
  • Let stand overnight to drain.
  • Next morning, sterilize your pint jars.
  • In a sauce pan, drop in the tea ball, add sugar, vinegar and turmeric.
  • Bring to a boil and boil for five minutes.
  • Stand back, the vinegar will get you.
  • Remove the tea strainer or spice bag.
  • In a large stock pot, add veggies and pour hot vinegar mix over the top and boil for five minutes more, stir occasionally.
  • Put in sterilized jars, seal.
  • Keep in the refrigerator.

    this sounds similar to my Nannas relish...she passed away alomst 10 yrs ago and I've been looking for a zucchini relish recipe using chopped zucchini, not shredded or grated. I'm going to try this! Thanks!
