Simple Vinaigrette

- 1 small shallot, minced (about 2 Tbs) shopping list
- 1 small clove garlic, minced (about 1/2 tsp) shopping list
- 2 tsp Dijon mustard (I used honey dijon for a tad of sweet) shopping list
- 3 Tbs white wine vinegar shopping list
- 1 Tbs water shopping list
- 3/4 cup extra virgin olive oil shopping list
- Kosher salt and freshly ground black pepper shopping list
How to make it
- Combine shallot, garlic, mustard, vinegar and water in a large bowl and whisk to combine. Whisking constantly, slowly drizzle in olive oil. Or place all ingredients in a tightly sealed jar and shake until emulsified (my preferred method). Season to taste with salt and pepper. Vinaigrette will keep in the refrigerator for up to two weeks.
