Oriental Ramen Noodle Asian Salad

- SALAD shopping list
- ½ head of cabbage, shredded finely (or buy a bag of pre-cut coleslaw mix) shopping list
- 2 packages Oriental Ramen Noodles, cooked as directed (reserve seasoning for dressing) shopping list
- optional salad ingredients: diced red pepper, diced green onions, shredded carrots ( I like to add some of each - adds nice color!) shopping list
- 1 cup salted cashews, chopped shopping list
- DRESSING shopping list
- 2/3 cup vegetable oil shopping list
- 2 tablespoons cider vinegar shopping list
- 2 packets of seasoning mix from Ramen noodle packages shopping list
- 5 to 6 tablespoons sugar shopping list
How to make it
- FOR SALAD: Cook noodles as directed, drain and cool, but do not add the seasoning packets. I like to chop up the noodles just a bit so they are easier to eat. Mix cabbage, noodles and any optional salad ingredients together in a large bowl. Just before serving, toss the salad with the dressing, and sprinkle cashews all over the top.
- FOR DRESSING: Put dressing ingredients in small jar and shake briskly until well blended and thickened; let set at least 30 minutes. Stir well again, just before pouring over salad.
