How to make it

  • Sift flours together with salt, and mix in a large bowl.
  • Stir in spices, ginger, garlic and chili.
  • Add spinach and mix well.
  • Add water, a cup first, then slowly to make a soft sticky dough. See Photo
  • Heat a wok or pan with enough oil to deep fry the bhajia.
  • Drop the mixture by spoonfuls (the bhajia should be about the size of a ping pong ball) into the oil and fry until golden brown See Photo You can also scoop the dough with your fingers and drop it gently by hand.
  • Drain on paper towel and serve with tamarind chutney or sweet chili sauce. See Photo

    These look delicious Michelle! Thanks for sharing the recipe. I bought chickpea flour once but never used it as I wasn't quite sure what to do with it. I quite like the flavour of chickpeas. I've had Onion Bhajis in Indian restaurants before and I do like spinach. Must try this!
