Bhajia - Spicy Vegetable Fritters

- 2 cups flour (self-rising, besan or a combination - I use a cup of each) shopping list
- 1 cup chopped spinach shopping list
- 1 tsp fennel seeds shopping list
- 1 tsp cumin seeds shopping list
- 1 tsp carom (ajwain) seeds shopping list
- 1 1/2 tsp salt shopping list
- 1/2 tsp garam masala shopping list
- 3 cloves garlic, crushed shopping list
- 1" fresh ginger, grated shopping list
- 1 small red chili, finely chopped shopping list
- 1 1/2 cups water (approx) shopping list
- oil for frying shopping list
How to make it
- Sift flours together with salt, and mix in a large bowl.
- Stir in spices, ginger, garlic and chili.
- Add spinach and mix well.
- Add water, a cup first, then slowly to make a soft sticky dough. See Photo
- Heat a wok or pan with enough oil to deep fry the bhajia.
- Drop the mixture by spoonfuls (the bhajia should be about the size of a ping pong ball) into the oil and fry until golden brown See Photo You can also scoop the dough with your fingers and drop it gently by hand.
- Drain on paper towel and serve with tamarind chutney or sweet chili sauce. See Photo
