Mediterranean Mini - Burgers

- 450g/1lb Mixta - 65/70% minced beef to 30/35% minced Pork or beef Mince shopping list
- 45g/1½oz Pancetta or Streaky Bacon - finely chopped shopping list
- 1 small clove Garlic - finely chopped shopping list
- 2tbsp Spring Onion - finely chopped shopping list
- 2tbsp basil - finely chopped shopping list
- 1tbsp flat leaf Parsley - finely chopped shopping list
- Liberal splashes Worcestershire Sauce - to taste shopping list
- 1 Egg Yolk - lightly beaten shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- Mix all the ingredients together, season to taste and form into small balls;
- Flatten the balls, shape into mini - burgers about 2½in/6cm in diameter and place on baking tray;
- Cover with cling film, put tray in fridge and chill burgers an hour or so;
- COOKING
- 1. Brush with a little oil and BBQ/Grill on a medium/high heat, turning as required, until meat is just cooked through with the juices running freely and clearly.
- OR
- 2. Melt 1½oz butter in frying pan, add the burgers and cook on medium heat;
- When sufficiently browned on one side, turn over and cook steadily until meat just cooked through with juices running freely and clearly;

Family loves this recipe. This is my go to for burgers and meatloaf now. When I do meatloaf I double the recipe then split into and turn one into a brown sugar meatloaf. Thank you Don for sharing this wonderful recipe.

Jan 4/17 Did this wonderful recipe again last night but as a meatloaf. Family loves the meatloaf and often request this as well. As always I doubled the recipe so that I can do a brown sugar one for DSs and plan for DH.
