Chunky Fish Fingers

- Sunflower Oil - for cooking shopping list
- 2 x 6oz Tilapia/Cod/Haddock Fillets - skinned and deboned - cut into Chunky Fish Fingers shopping list
- 2tsp Smoked Paprika shopping list
- Plain Flour - seasoned with Paprika, Salt and Pepper shopping list
- 1 Egg - lightly beaten in a bowl large enough in which to dunk the Fish shopping list
- Quantity fresh Breadcrumbs - sufficient to fully coat the fish - on a flat dish shopping list
- 4 Sprigs fresh Thyme shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- Place the fish fingers on a flat dish and coat them with the seasoned flour, making sure they are well covered on both sides;
- Dunk them in the egg mixture then coat them in the breadcrumbs, again ensuring they are well covered on all sides;
- Shake to remove any excess crumbs;
- Pour sufficient oil to fry the fish into a large frying pan;
- On a medium heat, add the thyme;
- Once oil starts to sizzle, add the fish;
- Cook for some 3 minutes or so each side until crispy and just cooked through;
- Remove thyme sprigs and Serve
