Biscuits For Two

- 1 C. all-purpose flour (see note) shopping list
- 1 tsp. baking powder shopping list
- 1 tsp. sugar shopping list
- 1/2 tsp. salt shopping list
- 1/4 C. (1/2 a stick) COLD unsalted butter shopping list
- 1/2 C. milk shopping list
How to make it
- Heat oven to 450 degrees. In a medium bowl, whisk together flour, baking powder, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Slowly stir in milk just until dry ingredients are moistened and dough starts to come together (you may not need all of it). Once the dough comes together in a shaggy mass, put it on a floured surface and gently knead it 8-10 times. Using your hands, pat the dough into a rectangle about 1/2- to 3/4-inch thick and, starting at the short end of the rectangle, fold it over on itself three times, like a business letter. Repeat folding process maybe 3-5 more times and you'll see the top of the dough becoming smoother each time. When it looks smooth to you (it doesn't have to be as smooth as glass), pat the dough into a rectangle about 1/2- to 1-inch thick. Using a 2, 2-1/2, or 3-inch biscuit cutter, cut out biscuits, gently re-working scraps as needed. (The number of biscuits you get will depend on the size of your cutter. I get 5-6 biscuits using a 2-1/2 inch cutter.) Gently brush off excess flour and place biscuits fairly close together, but not quite touching, upside down on a parchment paper lined baking sheet. Bake 10 mins. or until golden. Serve immediately with lots of butter - yum!
- To make 12 biscuits, use:
- 2 C. flour
- 1 T. baking powder
- 2 tsps. sugar
- 1 tsp. salt
- 8 T. (1 stick) COLD unsalted butter
- 1 C. milk
- Note: Using half all-purpose flour and half cake flour makes a nice pastry flour substitute, but the biscuits can also be made entirely with all-purpose flour. Made either way, they are delicious!
