How to make it

  • Boil water in a large pan, add the asparagus whole and cook for some 3 to 5 minutes or so or until tender but not mushy;
  • When cool enough to handle, cut into 2cm/¾in lengths;
  • Heat the oil and 15g/½oz butter in a large frying pan;
  • Add the pancetta and cook gently for some 3 to 4 minutes or so until golden but not crispy;
  • Melt a further 1oz butter in the pan, add the onion, red pepper and garlic and cook on gentle heat, stirring frequently, for a further 3 minutes or so, until softened a bit;
  • Meanwhile, ensure hot stock is ready, simmering in another saucepan;
  • Add rice to onion mixture and stir for some 2 minutes or so until rice begins to pop;
  • Add wine, and continue stirring until almost absorbed;
  • Add a little stock, stirring until stock absorbed, then add a little more and repeat the process;
  • Stir often to ensure rice stays separate, always allowing rice to absorb the stock before adding more;
  • After 17 to 20 minutes add asparagus and peas and increase to high heat, stirring, until boiling, when return to low heat;
  • After 20 to 25 minutes, rice should be moist and creamy but with still a slight bite;
  • Add 5tbsp of the parmesan and remaining ½oz butter, season to taste and stir until everything heated through and the cheese just melts;
  • Serve hot with remaining parmesan and crusty bread on side.

    LOVED this! The name of the recipe says it all. A creamy risotto that’s rich with flavor. And, it’s easy to make! This is a well written recipe for anyone making risotto for the first time. I followed the directions exactly and it turned out perfect. I did, however, make a couple of substitutions. First, I used prosciutto instead of pancetta. Due to an error with my wine purchase, I had to omit the wine. So instead of wine, I used the water the asparagus was cooked in. It really enhanced the asparagus flavor in the dish. Oh, so good! This is a recipe that I will be making again. Thank you, Don, for sharing another one of your fantastic recipes!
