How to make it

  • CHICKEN
  • In a saucer, mix chilli powder, salt, pepper and lemon juice;
  • Make gashes in chicken pieces, rub mixture all over them all and set aside;
  • MARINADE
  • Put all ingredients except food colouring into a pestle and mortar bowl and combine well together;
  • Add food colouring and combine with mixture;
  • Rub this mixture into and coat the chicken;
  • Chill and marinate for up to 24 Hours.
  • COOKING
  • Preheat oven to 200c/400f/Gas 6
  • Melt butter in a small bowl
  • Place chicken pieces on a rack over a large baking dish;
  • Pour half melted butter over chicken and bake for some 15 to 20 minutes or so until beginning to crisp up;
  • Turn chicken over and pour over remaining butter and bake for further 15 to 20 minutes or so again or until beginning to crisp up;
  • Ensure both sides crispy then serve with salad and bread;
  • Use juices remaining in oven tray as gravy into which to dip the bread.
