Salsa Verde

- 120ml/8tbsp Extra Virgin Olive Oil; shopping list
- 60ml/4tbsp White Wine Vinegar; shopping list
- 1 clove Garlic - finely chopped; shopping list
- 2tbsp sweet White Onion - grated; shopping list
- 3tbsp capers - drained and rinsed; shopping list
- 1tsp Dijon Mustard shopping list
- ¾oz flat leaf Parsley - finely chopped shopping list
- Handful basil leaves - finely chopped; shopping list
- Salt & freshly ground black pepper shopping list
How to make it
- In a bowl, combine the wine vinegar, garlic, onion, capers, mustard, parsley and basil;
- Gradually add the oil, pouring in slowly, whisking continuously to avoid oil/vinegar separation;
- Season with salt and pepper - to taste;
- Set aside at room temperature to marinate for 1 to 2 hours.
