Leftover Baked Potato Scramble

- 1 medium sized leftover Baked Potato cut in bite-size cubes (leave skin on) shopping list
- 2 T. Olive Oil shopping list
- 1/4 c. diced Onion shopping list
- 1/2 c. diced Green bell pepper shopping list
- 1/4 t. Salt shopping list
- 1/8 t. Cracked black pepper shopping list
- 4 Eggs - lightly beaten shopping list
- 2 T. grated Parmesan cheese shopping list
How to make it
- 1. Heat Olive Oil on medium heat and add potato, onion and green pepper.
- 2. Cook about 10 - 15 minutes until onion and green pepper are soft and potato is heated through and starting to brown.
- 3. Add salt and pepper.
- 4. Add egg and Parmesan cheese.
- 5. Flip with rubber spatula to mix and scramble mixture for about 3 - 5 minutes until egg is cooked through.
- 6. Top with an extra sprinkle of Parmesan Cheese or your favorite topping for eggs.
- Note: works well with stuffed or potatoes dressed with sour cream and/or butter.
