    Hoppelpoppel Eggs With Bacon, Onions, And Potatoes
    Bauernfrhstck German Farmers Breakfast
    Made for IMI2's October 2018 "Pumpkin, Halloween, Octoberfest" challenge. This is for the Octoberfest/German part. Both recipes use the same ingredients.

    This is the only way I can eat eggs without getting an upset stomach as weird as that sounds. Delicious and I love that everything is tossed together. A very "forgiving" recipe too because exact measurements are not needed and you can add other ingredients like chopped veggies and/or cheese.
    I've been making something similar and didn't even know it was a German dish (LOL!!!) except I use leftover baked potatoes. Leftover Baked Potato Scramble

    I love that name, Hoppel Poppel! Now this is a leftover potato dish my husband would love instead of potato pancakes. And I can see it filling up my hollow-legged children all day! Bookmarking! :D

I`m sure I would like the Hoppelpoppel (and I`d probably make it once just so I could say Hoppelpoppel) but I`m one of those people who, as a kid, didn`t like my food to touch, and so the idea of mixing potato with my egg makes me slightly leery. :) I am going to give it a try though. Your review has swayed me. :)

    Fantastic photo, LindaLMT! I saw this when I was looking for recipes and loved the name Hoppelpoppel. I've always known it as Bauernfruhstuck and have been making it as long as I can remember. I used to whip this up in the morning and take it to work or send it with DH to work for breakfast pot lucks. It was always a huge hit and everyone wanted the recipe. You're right! So easy to mix everything together and not worry about exact measurements. There is another one on here that I was thinking about making for The Recipe Challenge. I hope you don't mind if a I'm a copycat.

    Thank you everyone! I just may have it again tomorrow because I still have par-boiled potato left. Hubs enjoyed it too which surprised me because he likes his items "separate" (LOL Janet!). Can’t wait to see yours DIZ!
