How to make it

  • Clean the mussels with a soft brush or a bit of the green scrubbing cloth, removing any dirt, barnacles and the beard. Remember the beard;
  • Discard any open, damaged or those which do not close when tapped;
  • Place in a bowl, cover with water and soak for an hour or so, changing water during process;
  • Place the butter in a large pan, add the onion and garlic and fry gently for some 3 minutes or so to soften but not coloured;
  • Add the wine, increase heat, bring to the boil and continue cooking to reduce wine by half;
  • Reduce heat, add the mussels and half the parsley, cover and cook for some 3 to 4 minutes or so until the mussels begin to open: Discard any that remain closed;
  • Add the remaining parsley and serve.

    My husband and I love mussels, but have never cooked them ourselves, this looks like a great recipe to start with!
