Cajun Stuffed Fried Potato Logs With Parmesan Garlic Sauce

- Potatoes shopping list
- 3 large red potatoes, peeled and cut into cubes shopping list
- 1/4 to -:1/3 cup flour plus a little more for rolling them shopping list
- Dash salt and pepper shopping list
- 1 egg shopping list
- Tablespoon heavy cream shopping list
- Tablespoon melted butter shopping list
- 2 tablespoons Olive oil and butter each shopping list
- Filling shopping list
- 3 tablespoons butter shopping list
- 1 cup chopped onions shopping list
- 1/4 cup chopped celery shopping list
- 4 ounces chopped mushrooms shopping list
- 1/4 cup chopped Tasso or ham shopping list
- 1 tablespoon chopped bell pepper shopping list
- Dash creole spice shopping list
- Sauce shopping list
- 2 cloves garlic minced shopping list
- 1/2 stick butter shopping list
- Tsp Zatarains Garlic and Herb spice shopping list
- 1/2 to 2/3 cup heavy cream shopping list
- 1/4 cup shaved Parmesan cheese shopping list
- * if desired 1 small chopped Roma tomato shopping list
How to make it
- For potatoes;
- Boil potatoes in water until tender
- Drain and mash potatoes
- Add butter, cream , salt and pepper
- Stir in flour and egg
- Filling:
- In a small skillet melt butter
- Add mushrooms, onions, celery, bell peppers and sauté until tender
- Stir in ham and spice and cook over med low for a few minutes
- Remove from heat
- To assemble:
- Divide potatoes into desired size ( about a 1/3 cup)'
- Place a little flour on smooth surface
- Place about a 1/3 to 1/2 cup of mixture on floured surface and pat into flat shape( add more flour if needed )
- Place a tablespoon or so of mushroom ham mixture in middle and fold or wrap potato around mixture center, covering the center mixture completely
- Continue making logs
- In skillet heat the 2 tablespoons olive oil and butter over med high
- Add logs and brown about two minutes on each side
- Remove to plate and keep warm while you make sauce
- Sauce
- In saucepan, melt butter
- Add garlic ( tomatoes if desired) and cook over med low heat , cooking about two to three minutes
- Raise heat to medium and stir in heavy cream and Parmesan cheese
- Stir and lower heat to low
- Stir in garlic and herb seasoning and cook another minute or two
- Served over warm potato logs
- If desired you can sprinkle with chopped green onions or parsley
