Pasta Fagioli Soup

- 1 lb. Sweet Italian Sausage shopping list
- 2 Tbsp. Olive Oil shopping list
- 1 Cup chopped onion shopping list
- 1 Cup chopped celery shopping list
- 1 Cup chopped carrots shopping list
- 1 Tsp. minced garlic (or more to taste) shopping list
- 1/2 Tsp. Ground Pepper shopping list
- 2 (32 oz.) boxes beef broth shopping list
- 1 (15 oz.) can tomato Sauce shopping list
- 1 (15 oz.) can Diced Tomatoes with Rosemary and Oregano shopping list
- 6 oz. Tomato Paste shopping list
- 1 1/2 Tsp. dried basil (fresh if you have it) shopping list
- 1 1/2 Tsp. dried Thyme (fresh if you have it) shopping list
- 1/2 cup chopped fresh Italian Parsley shopping list
- 1 (15 oz.) can Cannellini beans (drained) shopping list
- 1 (15 oz.) can Great Northern beans (drained) shopping list
- 2 cups Ditalini Pasta shopping list
- Grated Parmesan or Asiago cheese shopping list
How to make it
- Cook sausage over medium heat until no longer pink. Drain and set aside.
- In a large pot, heat olive oil. Saute onion, celery, carrots, garlic and black pepper until vegetables are tender, about 10 minutes.
- Stir in sausage, beef broth, tomato sauce, diced tomatoes and tomato paste. Season with thyme and basil. Cover, reduce heat and simmer 1 hour.
- Add beans and simmer for 10 minutes.
- Add pasta and parsley and cook until pasta is al dente, 8 to 10 minutes.
- To serve, top each bowl with shredded cheese.

Really good soup! I liked the richness with the tomato paste and beef broth. I couldn't find any small soup pasta so I used macaroni. I rolled the sausage meat into little meatballs and dropped them in the soup-- because I totally forgot about browni...more
