How to make it

  • Cook sausage over medium heat until no longer pink. Drain and set aside.
  • In a large pot, heat olive oil. Saute onion, celery, carrots, garlic and black pepper until vegetables are tender, about 10 minutes.
  • Stir in sausage, beef broth, tomato sauce, diced tomatoes and tomato paste. Season with thyme and basil. Cover, reduce heat and simmer 1 hour.
  • Add beans and simmer for 10 minutes.
  • Add pasta and parsley and cook until pasta is al dente, 8 to 10 minutes.
  • To serve, top each bowl with shredded cheese.

    Really good soup! I liked the richness with the tomato paste and beef broth. I couldn't find any small soup pasta so I used macaroni. I rolled the sausage meat into little meatballs and dropped them in the soup-- because I totally forgot about browning it before I added everything else to the pot! It still tasted good that way though!
