How to make it
- Cook rice by adding 2 cups of water to 1 cup of rice and add the stock cube. Bring to boil, cover with tight lid then turn down to lowest setting - cook for 14 minutes.
- Drain tuna.
- Put rice in a bowl, fluff up with some olive oil and add tuna and a few squirts of lemon or lime juice.
- I either eat this staright (if I'm in a rush) or put wrap in tortillas with some chilli sauce... mmmm
- nice and easy!
