Quick And Easy Lemon Loaf

- 1/2 cup shortening shopping list
- 1 cup granulated white sugar shopping list
- 2 eggs shopping list
- 1 and 1/2 cups flour shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1/2 cup milk, At this point you could add more lemon juice or lemon zest to the batter if you wish a stronger lemon flavor. shopping list
- Topping: shopping list
- 1/4 cup granulated white sugar shopping list
- Juice of one lemon. shopping list
How to make it
- Put the flour in a bowl, Cut the shortening in
- And the rest except the topping and mixed together.
- Pour into a greased or sprayed loaf pan lined with parchment paper and bake at 325° for 45 minutes.
- Poke tiny holes in the loaf and then
- Mix the lemon juice and sugar together and pour over the loaf when finished baking.
- Leave the loaf in the pan for 15 to 20 minutes then put on wire rack to finish cooling
- FOOTNOTES
- I use lactose-free milk in this, it stays fresh for 4 to 5 days if wrapped well. It freezes very well also. I put six servings but it depends how thick the slices or cut. You can also put some lemon zest in the batter, those that have made this said this is what they did and it worked out well. Some have poked holes in the loaf as to allow the lemon to go through

This is very nice. I make this gluten free. I used butter with no problems and add some lemon juice with the milk. It is a very versatile recipe. Thanks for sharing it with us.
