How to make it

  • Heat oven to 375 degrees. Lightly grease a 13X9 baking pan; set aside. In a medium bowl, beat together milk and eggs. Continuing to beat, add flour and salt and beat until smooth; set aside. Place butter in the greased pan and melt it in the oven. Keep a close eye on it, though, because you just want it to melt, not bake. (I take it out when it's not quite melted and swirl it around in the pan to finish melting so it doesn't brown.) Remove pan with melted butter from oven and immediately pour in batter. Bake 25-30 mins. or until the pancake is golden (it will puff up wildly in the oven, but don't be alarmed, it's OK). The pancake deflates quickly, so have everyone at the table and ready to eat because you will need to serve this immediately. Cut into 4 large squares and top with butter and syrup.
  • Note: The number of servings will depend on what else you serve. If you serve juice, fruit, sausage and/or bacon, you can serve up to 4 people. By itself, it makes 2 generous servings. The edges of this taste very pastry-like and are my favorite part - yum!
