Ingredients

How to make it

  • Line a large baking sheet with tinfoil(for easy clean up), and drizzle with oil(a thin layer), preheat oven to 425 and place tray in oven.
  • Flatten out chicken breast halves so they are all the same width about 1/4 inch
  • season both sides of chicken pieces with salt and pepper.
  • mix flour with paprika on a large plate
  • season eggs with salt and pepper and whisk together in a shallow bowl
  • place bread crumbs on a large plate, and mix in the zest of 1 lemon.
  • dredge each piece of chicken in flour, egg, and then breadcrumbs, and set aside on a clean plate.
  • continue for all pieces of chicken.
  • When oven is preheated, carefully remove pan from oven and place chicken on in one single layer.
  • drizzle tops of chicken with oil, and return to oven
  • cook for 5-6 minutes, flip, and return to oven for another 5-6 minutes.
  • Enjoy with fresh squeezed le

    I have never been able to really follow a recipe-lol- I have made this recipe using pork a few times- it is wonderful- tonite I am attempting it on the grill in a throw away foil pan-- I cannot image why it will not work-- and I have an electric grill so easy to monitor--- I will let you know- at worst I turn on the stovetop to finish??- I think it will be grand!!

    A wonderful and easy chicken dish. I used lactose and gluten free oatmeal that i grounded up fine. The oatmeal does not have any taste when used for breading so i had to add spices. I added fresh rosemary and fresh basil finely chopped along with minced onion and garlic added to the oatmeal crumbs. This is a very tasty dish and super easy. This will be made again.
