Baked Chicken Schnitzel By Chef V

                    - 6 chicken breast, cut in half length wise(butterflied) shopping list
- 3/4 cup flour shopping list
- 2 eggs (whisked) shopping list
- 2 Cups seasoned breadcrumbs , I use President's Choice Italian bread crumbs. shopping list
- Zest of 1 large lemon shopping list
- 1 tablespoon paprika shopping list
- olive oil for drizzling. shopping list
- salt and pepper to taste shopping list
How to make it 
                    - Line a large baking sheet with tinfoil(for easy clean up), and drizzle with oil(a thin layer), preheat oven to 425 and place tray in oven.
- Flatten out chicken breast halves so they are all the same width about 1/4 inch
- season both sides of chicken pieces with salt and pepper.
- mix flour with paprika on a large plate
- season eggs with salt and pepper and whisk together in a shallow bowl
- place bread crumbs on a large plate, and mix in the zest of 1 lemon.
- dredge each piece of chicken in flour, egg, and then breadcrumbs, and set aside on a clean plate.
- continue for all pieces of chicken.
- When oven is preheated, carefully remove pan from oven and place chicken on in one single layer.
- drizzle tops of chicken with oil, and return to oven
- cook for 5-6 minutes, flip, and return to oven for another 5-6 minutes.
- Enjoy with fresh squeezed le
