- 1 can black beans (rinsed and drained) shopping list
- 1 can black eye peas (rinsed and drained) shopping list
- 1 can white corn (drained) shopping list
- 1 can sliced olives (drained) shopping list
- ½ red onion (diced) shopping list
- ½ red pepper (diced) shopping list
- ½ green pepper (diced) shopping list
- 1 cup chopped fresh cilantro shopping list
- 3 cloves garlic (minced) shopping list
- Dressing: shopping list
- ¼ cup vegetable oil shopping list
- 1/3 cup cider vinegar or red wine vinegar shopping list
- 2 Tablespoons water (if you use cider vinegar) shopping list
- 4 Tablespoons of sugar shopping list
- 1 Tablespoon ground cumin shopping list
How to make it
- 1) Combine all ingredients in a bowl and mix.
- 2) Wisk all ingredients together for dressing and add to chopped vegetable/bean mixture.
- 3) Refrigerate at least two hours before serving. If the dressing is too tart, you can add a little more water or more sugar.
