Wildcat Cafe Blueberry Pancakes Recipe
This is a great pancake recipe I haven't made in a long time. I used to buy a box of blueberries in season and freeze them to use year round.

Ingredients
  • 1 1/2 cup all purpose flour
  • 1 1/2 cup whole wheat flour
  • 1 1/2 tsp salt
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 cup of sugar
  • 3 eggs
  • 1/2 cup melted butter
  • 1 cup plain yogurt
  • 1 cup milk
  • 2 cups blueberries, fresh or frozen

Directions
  1. Electric frying pan set to 350 degrees.
  2. In a large bowl combine first 6 ingredients.
  3. In a separate bowl beat together the eggs and add melted butter, yogurt and milk.
  4. Pour over flour mixture and mix/stir until just blended but still lumpy.
  5. Spoon 1/3 cup batter onto greased grill and sprinkle with blueberries.
  6. When bubbles form on the top, flip and cook until bottom is browned. Approximately 4 minutes per side.
  7. Keep the pancakes warm in the oven at about 200 covered with a slightly dampened tea towel.
