How to make it

  • 1. Go out back and cut a stalk of bananas. See Photo
  • 2. Cut down the tree.
  • 3. Claim a couple hands for yourself.
  • 4. Put your oven racks to the bottom third of the oven; heat to 350º F. Grease the bottom of a 9 x 5 x 3 loaf pan.
  • 5. Cream the sugar and butter together in a large bowl with an electric mixer See Photo. Add the eggs and blend; then add the bananas, buttermilk, rum and vanilla. Beat until smooth.
  • 6. Sift or stir together the flour, baking soda and salt. Add to the banana mixture and stir until moistened. Stir in the nuts, if using.
  • 7. Bake for about 1 1/4 hours, or until a toothpick inserted into the center comes out clean.
  • 8. Cool 10 minutes, then remove the bread from the pan to a wire rack to cool. Cool completely. See Photo
  • To store, wrap in plastic wrap, it will stay on the counter for up to 3 days. If it lasts that long.

    I actually have "bread ready" bananas in my freezer (of all places). This looks like a nice recipe especially with the rum. My husband will like this! Great for the Holidays. Thanks RJ.
